Chickpeas and Greens over quinoa

This is my go to super fast healthy meal. An easy, flavourful chickpeas and greens saute on top of some quinoa, with a few wedges of chickpea flour pancake on the side. You can make this whole thing, all three components, in about 15 minutes total. About 10 if your quinoa’s already cooked.

How long the chickpeas & greens will take depends on the greens you choose, obviously. I used spinach this time, which takes – maybe a minute. Swiss chard just a little bit longer, and kale a bit longer than that. Because I’m so lazy, I tend to go with spinach for this meal because it’s easily obtained nicely washed and in a bag. Super fast!

Super Fast Chickpeas & Greens

  • one small onion, chopped fine or a couple of shallots, chopped
  • a couple cloves of garlic, minced
  • one tomato, chopped
  • herbs and spices of your choice
  • one can of chickpeas, drained
  • spinach, swiss chard or kale

Heat some oil in a pan over medium heat. Saute the onion until translucent, then add the garlic and saute for a minute or two. Add the tomato and fry for a minute or so, then add your spices. Dump in your chickpeas and greens, stir, then cover. When your greens are wilted, mix well, then add some lemon juice or vinegar, and salt and pepper to taste. Eat!
